MCLs typically heal without surgery. And in general, the more you flex, and extend, your knee the better. Bike motion is great for them, and helps with the supporting muscles as well.
The hinged brace you received is just for early recovery. As your leg has recovered from the initial trauma you can quit using it.
As long as you are basically safe and can handle crashing, yes, a real bike is fine. An ACL recon is more extensive, but I was riding outside some at two weeks. Probably not the smartest thing, but oh my are those stationary machines boring.
I'd say no need to sleep in your brace. But differ to your doc. I dumped mine quite early and when I confessed to the doc, he just laughed asking what the heck I was doing in bed to need a brace.
And the fact you do walk a lot should speed your recovery, not slow it.
